Khaman is a light, spongy vegan snack made with gram flour, spices, and herbs, perfect for any time.

Use Eno for fluffy, soft khaman, avoiding excess baking soda for a soapy aroma and less sponginess.

– Gram flour (besan) – Rava (or semolina) - optional – Sugar – Ginger – Green chillie – Turmeric powder – Asafoetida (hing) – Oil (any neutral oil or peanut oil) – Eno (fruit salt) or baking soda – Salt – Lemon juice or pure food grade citric acid – Water – Mustard seed – Cumin seeds - optional – White sesame seed – Curry leave – Green chilies - optional – Sugar
Grease pan with oil. Mix besan, turmeric, asafoetida, lemon juice, ginger-chili paste, sugar, oil, salt, and water.

Add rava. Ensure smooth batter without lumps. Add eno, mix quickly.

Steam for 12-20 mins until toothpick comes out clean.

Allow the steamed khaman to cool down to lukewarm temperature. Gently slide a butter knife along the edges to loosen it.

Heat oil, crackle mustard, add cumin, curry leaves, sesame seeds, and water. Boil with sugar.

Pour tempering over khaman. Garnish with coriander and coconut. Serve fresh or store in airtight container.
