Step-by-Step Process to Make Thandai Syrup at Home

Making Thandai syrup at home is easy, and with the right ingredients, you can enjoy this delicious and aromatic syrup whenever you want. Here’s how you can make it from scratch:

1. Soak the Nuts and Seeds

  • Start by soaking the almonds, pistachios, melon seeds, and poppy seeds in water for about 6-8 hours or overnight. This will soften them and make the grinding process easier.
  • Once soaked, drain the water and set the nuts and seeds aside.

2. Grind the Spices and Nuts

  • In a blender or food processor, add the soaked almonds, pistachios, melon seeds, poppy seeds, fennel seeds, black pepper, nutmeg, and saffron threads.
  • Grind these ingredients into a smooth paste by adding a little water. The consistency should be thick but smooth enough to form a syrup when mixed with sugar and water.

3. Prepare the Sugar Syrup

  • In a heavy-bottomed saucepan, add 400 gm sugar and about 1 cup of water. Heat the mixture over medium heat, stirring continuously until the sugar dissolves completely.
  • Once the sugar dissolves, bring it to a light boil and cook for about 5 minutes, ensuring the syrup thickens slightly.

4. Combine the Ground Paste and Sugar Syrup

  • Once your sugar syrup is ready, add the ground mixture of nuts and seeds to the syrup. Stir well to combine all the ingredients.
  • Allow this mixture to simmer on low heat for another 10-15 minutes to ensure the flavors blend well.
  • Stir occasionally to avoid any burning or sticking to the bottom.

5. Add Gulkand and Let it Cool

  • Add 2-3 tablespoons of Gulkand (rose petal jam) to the syrup. Gulkand adds a unique flavor and natural sweetness to your Thandai syrup.
  • Stir the mixture and let it cool down to room temperature. The syrup should be thick and aromatic by this time.

6. Strain the Syrup (Optional)

  • For a smoother texture, you can strain the syrup using a fine mesh sieve to remove any remaining bits of nuts or seeds. This step is optional and depends on your preference for texture.

7. Store the Syrup

  • Once cooled, transfer the Thandai syrup into a clean, airtight jar. The syrup can be stored in the refrigerator for up to 2-3 weeks.
