Bun Dosa Recipe: A Perfect South Indian Delight

Bun Dosa is a popular dish that blends the crispy texture of dosas with the rich flavors of South Indian spices. It’s not only delicious but also easy to make, offering a delightful twist to your regular dosa routine. Here’s a step-by-step guide to making Bun Dosa at home.

Ingredients (सामग्री)

For the Batter (बैटर के लिए):

  • 1.5 cups Semolina (सूजी) – Semolina forms the base of the batter and gives it a soft and spongy texture.
  • ½ + ¼ cup Curd (दही) – Adds a tangy flavor and helps in fermentation.
  • 1.5 cups Water (पानी) – Water is needed to bring the batter to the right consistency.
  • Salt to taste (स्वादानुसार नमक) – Adjust according to preference.

For Tadka (तड़का के लिए):

  • 2 tbsp Oil (तेल) – Used for tempering the spices.
  • 1 tsp Mustard seeds (सरसों के दाने) – Mustard seeds give a warm and pungent flavor.
  • ½ tsp Hing (हींग) – Adds a distinct aroma to the dish.
  • 3 nos Green Chilli, chopped (हरी मिर्च, कटी हुई) – Adds spice and heat to the dish.
  • 6 to 8 Curry Leaves (करी पत्ता) – Essential for authentic South Indian flavors.
  • 1 tbsp Chana Dal (चना दाल) – Adds crunch and texture.
  • 1 tbsp Ginger, chopped (अदरक, कटा हुआ) – Adds freshness and spice.
  • ½ Onion, chopped (प्याज, कटा हुआ) – Adds sweetness and depth to the flavor.

Other Ingredients (अन्य सामग्री):

  • 3 tbsp Fresh Coriander Leaves (ताजा धनिया पत्ता) – For garnishing and enhancing the flavor.
  • 1 tsp Baking Soda (बेकिंग सोडा) – Helps in making the dosa fluffy.
  • Salt to taste (स्वादानुसार नमक) – Adjust as per taste.
  • Oil for cooking (पकाने के लिए तेल) – Used for cooking the dosas.

For Chutney (चटनी के लिए):

  • 4 tbsp Oil (तेल) – For frying the chutney ingredients.
  • 1 tbsp Urad Dal (उड़द दाल) – Adds texture and richness.
  • ½ tsp Hing (हींग) – Imparts a distinct flavor to the chutney.
  • 2 nos Dry Red Chilli (सूखी लाल मिर्च) – Adds spice and color.
  • 2 tsp Mustard Seeds (सरसों के दाने) – Mustard seeds enhance the chutney’s taste.
  • 2 tsp Cumin Seeds (जीरा) – A fragrant addition to the chutney.
  • 6 to 8 Curry Leaves (करी पत्ता) – Essential for the authentic South Indian taste.
  • 6 to 8 Garlic Cloves (लहसुन की कलियां) – Adds a pungent and savory flavor.
  • 2 inch Ginger (अदरक) – Gives freshness to the chutney.
  • 2 nos Green Chilli (हरी मिर्च) – Adds heat and flavor.
  • 2 nos Onion, roughly chopped (प्याज, मोटा कटा हुआ) – Adds sweetness and complexity.
  • 4 nos Tomato (टमाटर) – Provides tanginess and moisture.
  • 2 tbsp Daliya Dal / Roasted Chana (दलिया दाल / भुना चना) – Adds body to the chutney.
  • 2 tsp Red Chilli Powder (लाल मिर्च पाउडर) – For a little heat and color.
  • 1 tbsp Tamarind Pulp or Lemon Juice (इमली का गूदा या नींबू का रस) – Balances the sweetness and spiciness of the chutney.
  • Salt to taste (स्वादानुसार नमक) – Adjust to your preference.

Preparation Steps

Making the Batter:

  1. Prepare the Batter: In a mixing bowl, combine semolina, curd, and water. Stir well to form a smooth batter. Add salt to taste and let it rest for 15 minutes to allow the semolina to absorb the liquid.
  2. Add Baking Soda: After resting, add a teaspoon of baking soda to the batter and mix it thoroughly. This will make the batter fluffy and give the dosas a soft texture.

Preparing the Tadka:

  1. Heat Oil: In a pan, heat the oil over medium heat.
  2. Add Spices: Add mustard seeds, hing, and curry leaves. Let them splutter.
  3. Add Aromatics: Add chopped green chillies, ginger, onion, and chana dal. Sauté until the onion softens and the chana dal becomes golden brown.
  4. Mix with the Batter: Add the prepared tadka to the batter and mix well.

Cooking the Bun Dosa:

  1. Heat the Pan: Heat a non-stick tawa (griddle) over medium heat and grease it lightly with oil.
  2. Pour the Batter: Pour a ladle full of batter onto the tawa and spread it gently into a thick round shape.
  3. Cook on Both Sides: Cook the dosa on one side until golden brown, then flip it over and cook the other side until crispy.
  4. Serve Hot: Remove from the tawa and place it on a plate. Garnish with fresh coriander leaves.

Preparing the Chutney:

  1. Prepare the Chutney: In a pan, heat oil and add urad dal, mustard seeds, cumin seeds, hing, dry red chillies, curry leaves, garlic, and ginger. Fry them until fragrant.
  2. Add Vegetables: Add the onions, tomatoes, and green chillies. Cook until the tomatoes turn soft.
  3. Blend the Chutney: Add roasted chana, red chilli powder, and tamarind pulp or lemon juice. Add salt to taste and blend everything into a smooth chutney. Add a little water if needed for the right consistency.
  4. Serve with Bun Dosa: Serve this chutney along with hot Bun Dosas for a complete meal.
